Lysozyme defends us from the all known bacterial infection. Lysozyme is a small enzyme (EC 3.2.1.17) that attacks the cell walls made of carbohydrate chains of bacteria. Bacteria have very strong skin carbohydrate chains, linked by polypeptide chains , that protect bacterial membrane against the cells osmotic pressure. Lysozyme breaks these carbohydrate chains, destroying the cell wall. The bacteria burst under their own internal pressure. This hydrolase activity is non-specifically targeted to the bacterial cell membranes and related with general non-specific organism defence.
